When I was more of a sugar junkie, I loved snickers flapjacks - so here's my take (healthy style).
Serves 6.
You will need:
500g Scottish rolled porridge oats
5 tbsp honey
3 tbsp organic coconut oil
4 tbsp crunchy organic peanut butter
1 banana, mashed
1 banana, mashed
Method
Preheat the oven to 180 degrees.
Melt the coconut oil in a saucepan on a low heat. Add the honey, and stir.
In a large mixing bowl, mash the banana with a fork, then pour in the oats, honey and oil mixture and peanut butter.
With a wooden spoon, mix all the ingredients together.
Grease a baking tray with coconut oil, and then spoon in the mixture evenly with a spatula.
Bake in the oven for 30 minutes until golden.
Wait until cool before cutting into pieces and serving. You could even slice these up into finger shapes to take as a snack to work.

If you fancy being slightly naughty, you could melt organic dark chocolate onto these as a treat - but i'm trying to refrain!
